Hollandaise boat


                             Easy Hollandaise

1 egg yolk
1/4 cup mayonaise
1    teaspoon lemon juice
pinch of cayenne
pinch of salt

Whisk all ingredients in a small stainless steel mixing bowl.  Set on a double boiler or simmering pot of water, and trickle in 2 Tbsp. melted butter, working it until the sauce is thickened.
