            Fish in parchment paper or foil






This meal is very light, low fat, low carb, low calorie-but tastes great!

Per serving, you will need:

1    6 oz. firm white fish fillet such as halibut or sea bass, skinless 
1    medium white or red skinned potato, very thinly sliced
2    thin rings of red bell pepper
1    thin slice of red or white onion, or 1 Tbsp. chopped shallot
fresh sprigs of parsley, thyme and tarragon
1-2    thin slice of lemon, peel and all
1-2    thin slice of orange, peel and all 
1    Tbsp. butter
1    Tbsp. white wine
salt and pepper

12 X 12 piece of parchment or foil

Fold parchment in half into a rectangle.  Open back up.  Fan potato slices  on one half of paper, centered about an inch from the center crease.  Top with separated onion and red pepper rings.  Season with salt and pepper.  Add a sprig of parsley and thyme.  Lay fish fillet on top of herbs, season with salt and pepper.  Lay tarragon and parsley sprigs on top of fish.  Arrange lemon and orange slices on top of herbs.  Top with the pat of butter and the wine.   Fold the second half of the paper over and bring the edges together .  Beginning at a creased corner, repeatedly fold and crease the edges of the paper upwards and around the perimeter of the package, sealing at the other end.  Staple the corners and any loose spots, you want a tight seal.  If you are using foil, it makes a good seal by itself and no stapling needed.

Bake on a cookie sheet in center of 375 oven for 20-25 minutes.  Allow to rest for 5 minutes.
Serve the whole pouch as is on a plate.  Open by cutting the top with scissors.  Eat right out of the pouch.
