                      Oysters Scampi





You will be amazed at how well this works, I'm ashamed I didn't think of it myself first...

There are no measurements for this recipe.  You have to eyeball it depending on how many oysters you're making.

oysters on the half shell, juice drained
minced garlic
finely chopped parsley
softened butter, unsalted
finely grated parmesan
medium size breadcrumbs-panko is okay

Preheat oven to 450.  Arrange oysters in their halfshells on cookie sheet, using ice-cream salt if wanted to cradle shells. (won't affect cooking!) 

Mix minced garlic and parsley into softened butter.  Place about 1 teaspoon of this mixture on top of each oyster.  Sprinkle with a large pinch of cheese and top with a small pinch of crumbs.

Bake in top half of oven until cheese is melted and crumbs begin to brown, 5 min or more.
