Sweet pea soup



                    Fresh green pea soup





I know, I know, who like peas?  YOU will when you've tasted this incredibly fresh and sweet tasting bowl of vitamins and fiber...


2        Tbsp.  butter, unsalted
1        shallots, thinly sliced
1        small onion, chopped
2        cans chicken broth (4 cups)
5        cups freshly shelled peas, OR  20 ounces frozen peas
salt and pepper
1/2    cup heavy cream or creme fraiche
croutons and chopped mint for garnish

In a large sauce pan, cook onions and shallots in the butter on medium heat until soft.  Do not brown.  Add broth and bring to a boil.  Add peas and cook for about 5 minutes.  If using frozen peas, add to pot, return to boil, and they're done.  Remove from heat.

Puree the soup in batches in the blender-or use an immersion stick right in the pot like I do.
Return to the pot and stove.  Whisk in cream.  Taste for seasoning, keep warm on lowest heat.
Serve garnished with fresh mint and croutons if desired.
