                Pepper steak

This recipe is from my husband's father.  It's very "retro", quick, easy and kid friendly too.

1 1/2 - 2 pounds top sirloin steak, sliced into thin strips about 2 inches long

2    Tbsp.  vegetable oil
1    large onion, sliced into thin half circles

2    garlic cloves, minced
3    bell peppers, different colors if possible, cut into thin strips
1    8 oz. can tomato sauce
1    cup water
1    8-12 oz. jar chili sauce, like Del Monte

salt and pepper
cooked white rice for serving

In a large skillet, heat oil over medium high heat.  Sear meat until browned but still rare, stirring often.  Remove from pan to a bowl and set aside.  Saute onions and peppers until they begin to soften, then add garlic and stir for one more minute.  Add meat back into pan with any juices under it.  Now add the tomato sauce, water, chili sauce and salt and pepper and simmer until meat is tender, about 30 minutes.    A nice wedge of iceberg with blue-cheese dressing, and you can settle down to an episode of---way before my time.....
