              Pineapple Salad


Just one word: WOW!  I wasn't sure about this one until I tried it, and does it work well indeed!  Perfect next to anything off the grill-especially fish-and with any curry, of course.


serve 4-6

1          pineapple, firm ripe, cored, peeled and diced to bite size
1/2     red onion, very thinly sliced
1         english cucumber, peeled and sliced into half rounds
1         small (half large) red bell pepper, small diced
1        red or green chili pepper, seeded and diced (optional)
2        Tbsp. powdered sugar
1         juicy lime, halved
shredded mint leaves (optional)
salt

Place cut pineapple, onions, cucumber and bell pepper in large bowl.  Lighly salt to taste, then sprinkle with powdered sugar.  Squeeze lime over all and toss gently to incorporate until sugar is dissolved.  Let rest up to 30 minutes.  Toss with shredded mint just before serving.
