                 Pork and glass noodle soup

The first time I saw this I thought 'pork soup-hm, you don't see that one very much', but it works!
Try the spring rolls of your choice for a follow up for a complete dinner your family will love.


2.5     pounds country style pork ribs, with or without bone
6        cups water
3/4    cup soy sauce
3/4    cup medium dry Sherry
1/4    cup brown sugar
1        head garlic, cut crosswise but unpeeled
3        cinnamon sticks (3 inch each)
1        whole star anise pod
4        bundles bean thread noodles (cellophane noodles) about 7 ounces total
sliced scallions, for garnish

Gently simmer all ingredients except noodles in a heavy pot, covered, skimming as needed, for 2 hours or until pork is falling off the bone tender. 

Transfer meat to a bowl and strain broth into a clean pot.  Coarsely shred the meat with your hands and distribute among 4 deep soup bowls.  Bring broth back to a simmer.  Rinse noodles under running cold water, then add to broth and cook until soft and see thru, about 5 minutes.  Distribute noodles into bowls over meat, then ladle on broth.  Garnish with sliced green onions.
