             Roasted cauliflower


The taste changes so much when you bring out the sugars by baking it at high heat.  Don't be afraid to let it get dark, the darker the better.

You need 1 head of cauliflower for 2 people for an appetizer.

Preheat oven to 425.  Slice cauliflower across whole head as shown.  You will have many smaller fall-away pieces too.  You could separate it into little flowerettes, but this method seems to work better here.  Coat a cookie sheet with non-stick spray.  Lay out and brush cauli. with olive oil and season with salt and pepper. 

Roast for 30 minutes or as long as it takes to brown them all up all over.  They will shrink a lot.   Turn with a spatula during roasting.  Don't be afraid to let them get really dark, the sweetness comes out best when they're really over cooked looking.
