                Spicy shrimp lettuce wraps




I first ate this filling in a Sushi bar, where the wrap was a colored tofu sheet.  I love the rice paper round wrap, it's almost invisable with a little texture....

small cooked salad shrimp or larger chopped cooked shrimp (or lump crabmeat)
bib lettuce leaves, washed and rib removed
hot chilli sauce (like Siracha)
mayonaise
rice paper rounds
thinly sliced scallions, whites and greens


Toss sliced scallions with shrimp meat and just enough mayo to moisten and bind lightly.  Add hotsauce to taste and mix well.

Soak rice round one at a time in warm water until pliable.  Lay on plastic cutting board.  Place lettuce leaf on half closest to you, then spoon some of the shrimp filling on top of the lettuce.  Roll and fold the package away from you, burrito style, tucking in one or both ends-may leave one end open for presentation.
