                    Spring rolls


The variations on these are practically endless, you decide what you're in the mood for.  It takes a little time to prep. these, but it is worth it.

Rice flour round spring roll wrappers
cooked udon noodles or bean thread noodles (glass noodles)
basil leaves, spriggs of fresh cilantro and mint
strips of bell peppers, cucumber, carrot
alfalfa sprouts
poached shrimp, cut in half lenghthwise
tofu cut into strips and fried crispy
thinly sliced Chinese bbq pork
slivered green onions
shredded cabbage or lettuce

Soak the rounds in warm water for several seconds to soften.  Lay out on work surface-a plastic cutting board sheet is great.  Layer your choice of herbs, meats and vegetables onto wrap and fold up burrito style.  Cover finished rolls with a wet paper towel to keep from drying out while you're working and until ready to eat.  May be assembled several hours ahead of time and refrigerated until needed.
